Tilapia Ceviche

Ingredients:

  • 9oz Seafood Made Simple Tilapia Fillets, cubed
  • 3/4 cup Lime juice, squeezed
  • 1 medium Red onion, quartered, thinly sliced
  • 2 Jalapenos, seeded & chopped
  • 1/2 cup Frozen corn kernels, thawed
  • 3 Tbsp. Orange Juice, fresh
  • 1/3 cup Cilantro, chopped
  • 1 Avocado, peeled, pitted & diced
  • Salt & Pepper (as needed)

Directions:

  • In a large bowl, combine the Tilapia, lime juice, orange juice & red onion. Use enough juice to cover the fish. Cover & refrigerate for about 4 hours, or until fish is opaque.
  • Drain the juice from the fish & onion mixture.
  • Mix together in a large bowl, jalapenos, corn kernels, cilantro & avocado. Stir in the tilapia mixture and season with salt & pepper to taste. Serve immediately.

Simple Serving Suggestions:

  • Serve the ceviche on its own or with some tortilla chips for dipping.

For an Extra Touch:

  • Add in a little fresh lime or orange zest at the end for a bright burst of color and flavor.
