Molasses Glazed Sockeye Salmon
Ingredients:
2ea 4oz. Sockeye Salmon Portions
1/4 cup Molasses
2 tbsp. Water
4 tbsp. Butter
1 tsp. Apple Cider Vinegar
Vegetable Oil
Salt & Pepper
Directions:
In a small sauce pan over medium-low heat combine molasses and water. Once mixture begins to warm, whisk in butter 1 tbsp. at a time.
Once incorporated finish by whisking in cider vinegar. Keep warm until ready to serve.
Season Salmon Fillet with salt and pepper.
Add salmon flesh side down and cook, without moving, until a golden brown crust has formed and fish becomes slightly opaque, approximately 3-5 minutes. Flip product, and baste with molasses glaze.
Lower heat to medium and continue to cook for 1-3 minutes.
Place fish on platter, brush fish with glaze and let rest for two minutes. Serve with roasted red potatoes & rosemary.
